cup unsalted butter (2 sticks) softened
cups confectioner’s sugar
cup pureed strawberries (from ½ cup chopped strawberries)
puree the strawberries: Place ½ cup of chopped
strawberries into a blender. Puree until
the strawberries are mushed to the point where they are liquefied. It should give you about ¼ cup.
a mixing bowl cream the butter. Slowly add the sugar beating well after each
addition. Add the pureed strawberries
along with the milk. Scrape the bowl to
make sure all ingredients are well blended in. Beat until the frosting is fluffy and of spreading consistency.
can spread the frosting with a knife or get fancy and use a pastry bag with a
star tip. You might end up with fewer
frosted cupcakes that way though.
you don’t have access to fresh strawberries you can substitute frozen ones.
the frosting is too stiff to spread, add a bit more milk until it has spreading
