Yesterday was Anzac Day and I was reminded that it would be nice to have some Anzac biscuits.
I had a look at a few recipes and made a few adjustments.
They turned out really well with the modifications.
1C rolled oats
1C plain flour.
1/2C brown sugar.
1/2C desiccated coconut.
1/4C canola oil.
2T golden syrup.
1tsp bicarbonate soda.
In a bowl combine the rolled oats, flour, brown sugar and coconut.
In a microwave safe jug heat the oil, golden syrup and water on high for around 50 seconds.
Add the bicarbonate soda and stir. The mixture will foam.
Add to the dry ingredients and mix well to combine.
I use my clean hands.
Roll into balls and place on a baking paper lined tray. I made 18 biscuits. Flatten with your fingers and cook in an oven preheated to 180 degrees Celsius for about 10 minutes until golden.
Still just as yummy this Anzac Day.
