Chocolate Cream Brownies
Makes about 12
These brownies are perfect for chocolate lovers.
3 1 ounce squares baking chocolate
½ cup unsalted butter, softened
2 eggs, beaten
1 cup granulated sugar
1 teaspoon vanilla
2/3 cups all purpose flour
¼ teaspoon baking soda
1 teaspoon cocoa powder
1 tablespoon whipping cream
2 tablespoons unsalted butter, softened
1 cup powdered sugar
1 cup semisweet chocolate chips
1/3 cup whipping cream
Preheat the oven to 350°
Spray an 8×8 inch baking dish with cooking spray.
Place the baking chocolate and butter in a microwave safe
bowl and microwave on medium for 1 minute. Take it out and stir well. If the chocolate isn’t completely melted,
microwave for another 15 seconds and stir until smooth. Set aside to cool.
In a bowl, mix the eggs, sugar and vanilla together. Add the chocolate mixture and blend well. Add the flour and baking soda to the brownie
mixture a little at a time until blended.
Pour the batter into the baking dish and bake about 25
minutes. Remove from the oven and allow
to cool completely before applying the filling.
In a mixing bowl combine the cocoa powder and whipping
cream. Beat in the butter and powdered
sugar and mix until creamy. Spread over
the cooled brownies and refrigerate until the filling is firm.
To make the frosting place the chocolate chips and whipping
cream in a microwave safe bowl and microwave on medium in 30 second intervals
and stir. This should take a minute or
two. Remove the bowl from the oven when
the chocolate is almost melted and stir until smooth. Pour the mixture over the brownies and tilt or
use a spatula to cover the filling. Refrigerate until the chocolate hardens. Then bring the brownies to room temperature to cut and serve.
