Chili with Biscuits
6 to 8 servings
This dish features chili with biscuits baked on top making
it a one dish meal.
1 pound ground beef
1 large onion, chopped
4 ribs of celery, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
¼ teaspoon cayenne pepper (add more or less depending on how
spicy you want it)
1 teaspoon salt
¼ teaspoon ground pepper
¼ cup flour
1 (28 ounce) can of petite diced tomatoes
1 (16 ounce.) can chili beans
1 (12 ounce) can refrigerated rolls
In a large skillet over medium heat add the ground
beef, onion, celery and garlic. Cook and stir until the beef is well crumbled
and is no longer pink and the vegetables are tender. Drain the excess fat. Then add the spices and flour and stir. Add the tomatoes and beans and simmer until
thickened which should take about 15 minutes. Stir from time to time to keep
the chili from sticking to the pan.
As the chili is cooking preheat the oven to 375°
and lightly grease a shallow 3 quart casserole dish.
Pour the chili into the casserole dish and top
with the refrigerated biscuits. Bake
uncovered for 10 to 15 minutes until the biscuits are golden.
Serve with shredded cheddar cheese, sour cream or
with other toppings that you like.
You can modify this recipe to your own
tastes. You can substitute ground turkey
for the beef. To make it spicier you can
add chili peppers. Add additional
ingredients that you like such as chopped green peppers or sliced mushrooms.
