3 Healthy Gnocchi Recipes

Gnocchi are actually soft dumplings that are typically made from semolina, normal wheat flour, eggs, variety of cheeses, potatoes, breadcrumbs, some cornmeal, or ingredients similar to these. It can be used with or without seasonings or flavorings of various herbs and spices. The dough that is used for gnocchi is usually rolled out, and then it is cut in small pieces that are about the size of your thumb. After that, the gnocchi are pressed down with a fork to create ridges for holding sauce. Or some people like to just cut them into small lumps. Gnocchi are typically enjoyed as a carb replacement for pasta in a first course, but they are also served as a side dish to other main courses.

Like other Italian meals, healthy gnocchi recipes have lots of variety and different names in different regions. For instance, Lombard and Tuscan malfatti (which actually means “poorly made”) are prepared with ricotta, spinach and flour, along with a variety of herbs when required, which is very similar to Tuscan gnudi although it contains much less flour.

Gnocchi are usually cooked by themselves in boiling salted water and then dressed with different sauces depending on preference and the type of recipe. Some gnocchi is made from slabs of cooked polenta or even semolina, which is then spread out for drying and afterwards layered with butter and cheese before finishing in the oven.

Gnocchi with White Beans

One difference was in a separate skillet I put a tablespoon of olive oil and started cooking the gnocchi by themselves ( about 5 min ) while at the same time in the main skillet I was cooking the onions/garlic. This allowed more room in the skillet for the gnocchis to get nice and brown on all sides. I then added them to main skillet with the onions/ garlic and continue to follow the recipe .
